| 做 法 |
(1)锅中加冷水,放入蛋,煮沸。5分钟后,蛋熟捞 起,放冷水中浸冷,去壳。 (2)把剥了壳的蛋放卤水锅中煮沸,20分钟后,取锅 离火,让它冷却,泡浸4小时后捞起。食时将蛋切成4瓣, 放在碟上,浇50克卤水,洒几滴香油,吃起来更香。
